Tapatio De Jalisco: Spotlighting San Antonio’s Flavor, One Plate at a Time

 

At Mammoth Roofing and Solar, we’re known for roofs that last—but we’ve always believed in building more than that. We’re here to build relationships, lift up local voices, and strengthen the communities we call home. That’s the spirit behind Mammoth Gives Back, our newest community initiative launching this May.

Through this campaign, we’ll be partnering with independently owned restaurants in San Antonio and pairing them with some of the city’s most trusted food creators and content producers. The goal? To amplify what makes these spots so special—and to bring more people through their doors.

Each month, we’ll feature two restaurants and provide select creative services like professional photography, short-form video, or social media amplification—at no cost to the restaurant. Every campaign is custom based on the restaurant’s needs and the creators involved.

“We’re proud of the roofs we build, but this is about something bigger,” said Scott Edwards, CEO of Mammoth Roofing and Solar. “Restaurants like Tapatio De Jalisco are the heart of every neighborhood, and we want to use our platform to lift up the people and flavors that define San Antonio.”

First Up: Tapatio De Jalisco

The inaugural feature of Mammoth Gives Back is a true community favorite: Tapatio De Jalisco Mexican Restaurant, located at 10410 Culebra Road, San Antonio, TX 78251. Known for its no-frills, full-flavor tacos and family-style atmosphere, Tapatio was chosen by the loyal audience of EatMigos, one of the city’s most influential food platforms.

To kick off the campaign, we collaborated with Chris Flores (@EatMigos) to include Tapatio in his fan-favorite Taco Tuesday video series. The segment, filmed on iPhone with the energy and authenticity that defines San Antonio food culture, shined a spotlight on what makes this spot a go-to for locals.

What followed was a beautiful moment of community response. Followers of EatMigos poured into the comments with their own love for Tapatio—sharing their go-to dishes, stories of birthday lunches, and late-night taco cravings. It wasn’t just content. It was connection.
